Aceto Balsamico Tradizionale di Modena Vecchio
A younger balsamic vinegar made with the same traditional techniques used for the extravecchio. Although not as concentrated as the extravecchio, it is sublime when used as marinades for lamb and fruit. The shape of the bottle is identical to the extravecchio, each numbered bottle has a white foil neck, the Consorzio Seal of Guarantee, and the seal of The Malpighi Family.

Our Gran Reserva from Vinagres de Yema has a mother vinegar dating from 1923. (We are rather certain that it is even older, but have no written documentation to prove it.)
